These Oatmeal Nut Butter Bites are addicting! I usually pop a couple of these for breakfast or a snack as they're loaded with protein, fiber, vitamins and minerals, healthy fats and antioxidants (but NO added sugar,low glycemic and wheat free). For a real treat, dress them up with a dollop of coconut milk ice cream and a cranberry orange compote on top....delish! P.S they taste remarkably similar to a particular not so calorie-friendly girl scout cookie with just the dollop of plain coconut milk ice cream! Enjoy!
1/4 cup pumpkin seeds
1/4 cup slivered almonds
1/2 cup walnuts
2 Tbsp flax seeds
1 Tbsp raisins or other dried fruit
1/2 oz 80% or higher cocoa dark chocolate (highest in antioxidants)
1 1/4 cup rolled oats
3 Tbsp real maple syrup
8 Tbsp almond or other nut butter (peanut, cashew etc.)
Grind flax seeds in a coffee grinder. Put pumpkin seeds and nuts in a food processor and grind to a dry crumbly consistency. Add chocolate and pulse into small pieces. Combine previous ingredients with oats, raisins, maple syrup and nut butter. Stir with spoon (or hands are easiest) and form into golf ball size bites. Cover and refrigerate for storing.
